How do I [journal - old style]
set this up?

"create a new gallery in journal (old) style"

I am apparently missing something. I see this in several of the tutorials but don't seem to see it in any options that I have.

Go into gallery settings for the gallery you want to change. In the look & feel section, click the Gallery style dropdown. Select Journal (Old).
