I was hijacking it, so I decided to start the discussion in here.

I just got to try this on my camera and it worked fine. When Custom function 4 is set to 2 and the camera is in AI Servo, the camera followed the subject while half pressing the shutter button. If I want to stop the AF I just pressed the * on the back of the camera to momentarily lock the AF after I released the * it resumed focusing. Are you sure you were on 2 (AF,AF lock)?

I have changed to C.Fn-04 number 1.

C.Fn-04 number 1
One-Shot = Press * (asterisk) to focus and the shutter button to attain AE lock (and shoot).

AI-Focus = Press * (asterisk) to focus (on the moving target) and the shutter button to attain AE lock (and shoot).

Focus and meter are separated (Instrutions manual page 142)

However,
a) if the central point is chosen, the camera doesn't care if any object comes across and keeps focus on the central point.
b) if all the points are chosen, the camera does care if any object comes across and "jumps" the focus to it.

In the photo herewith - shot under C.Fn-04 0 (zero) AF/AE lock with the central point - the target was at the center. No problem then. My luck.
