what metering mode for manual

Well, AFAIK it doesn't make a difference since you're making the settings manually.

I'm not sure if the in camera meter "guide" changes when using evaluative, CW, partial or spot. I've never noticed.

I just leave the camera on evaluative, use the meter in the VF as a guide, take a couple of test shots and adjust from there.
