Blood sausage, used mostly in Creole and Cajun dishes.
New Orleans?

Looks Country. I'll say somewhere around Lafayette or Crowley. Boudin is very good. It is usually a rice mixture with something else...crawfish, shrimp, catfish, etc in an intestinal case.
Have you ever been to the Boudin Festival (Yes, they have one every year!)

Delicious sausage.
I know the French stuff, Boudin blanc is white, has no blood. Boudin noir is the dark one, has the blood.
The Cajun boudin is different, the white has rice in it, the black is called "rouge" and is supposed to be hard to find, perhaps because it needs to be sold fresh.
I love their accents and the zydeco music. :ivar

Sid, I think it is in Broussard about 3 weeks before Mardi Gras. They have some sort of festival in Central Louisiana (Cajun Country) almost every week. Those folks really know how to party.:bow :bow :bow You would probably enjoy the Cajun Music Festival in Lafayette. When you get back to Lafayette you need to visit the Cajun Village. And New Iberia (about 30 miles South of Lafayette) is a neat place. Go to Avery Island where they make Tabasco Sauce. They have salt mines, a Jungle Garden and a Bird Santuary.

USA, state of Louisiana, about three hours west of New Orleans, central-southern part also known as Cajun Country (http://www.louisianamuseums.org/public_images/map_images/cajun_map.jpg). A rich, French-ethnic heritage. Some speak French, their Zydeco music is often sung in French.
The joke is seeing 'boudin', a regional sausage, on the gas station sign. Very unusual.

Skippy,
Unleaded is running about $3.00 per US gallon - it varies as much as 30 cents up or down almost on a daily basis.
Louisiana is a great place. Good fishing, good hunting, good food, great music, great people. What's not to like about all that?
Sid, you should see the Quick Stop gas stations along the coast on Lake Michigan that sell champange among other things
