Gallery Quicksettings question

Oops - I have set up a 'Quicksettings' for new galleries but for the life of me I can no longer find out how I did it and all my searches have proved fruitless. Can anyone set me on the road to enlightenment? :scratch

Also, is there a way to change the default gallery quicksettings from Default to my customised set or can I change the default settings themselves (I suspect the answer to the first question may fix that one).
