In a nutshell, histograms are a plot of the amount of pixels at different brightness values in a given image. They are one of many tools for examining your image for proper exposure and understanding the distribution of color and tone through the image.
I'd suggest reading this recent dgrin thread (http://www.dgrin.com/showthread.php?t=39300), this article on histograms (http://www.luminous-landscape.com/tutorials/understanding-series/understanding-histograms.shtml), this article on "exposing to the right (http://www.luminous-landscape.com/tutorials/expose-right.shtml)" and this article on different types of histograms (http://www.cambridgeincolour.com/tutorials/histograms2.htm).
Histograms (http://www.dpreview.com/learn/?/key=histogram)
Curves (http://www.cnet.com.au/digitalcameras/cameras/0,39036184,40000806,00.htm)
Have a read of the above links.
