Open a gallery -> gallery tools dropdown -> customize gallery -> scroll down to security & privacy -> watermark.
Don't know for sure but, I believe you will have to do this with all existing galleries. I'm still making my watermark so I will find out later.

Maybe this isn't not clear enough in the help section, but the watermarking in "customize gallery" refers to the automatic watermarking SmugMug can do as you add photos to that gallery.
For removing or adding watermarks after they are in a gallery, use the "watermarking" photo tool. You'll be able to select photos in bulk.
Note: No need to remove the proof watermark first, just add a different watermark and it will replace the PROOF automagically.
Hope that helps!

From help section:
Ok, how to apply them?
Do it automagically: Make it easy and let SmugMug watermark your photos as they're added. Go to customize gallery (http://www.smugmug.com/help/picture-storage) and choose yes to watermarking.
Add or remove anytime, in bulk. Choose watermarking from the photo tools pull-down menu. Then select thumbnails, choose add or remove, and click watermark.

I just made some test ones.I chose orange poo. But as of now one photo is marked so maybe it takes time like on teh old "proof" system?
edit: Ok cool I got it. Thanks andy for helping make smugmmug soo good!

Very cool thanks guys. Now to tweak my old, unused PS action to generate a proper PNG image for this. :D

Gus,
go to your Control Panel, under Pro Tools, you should see 'Custom Watermarks'...click Edit.
From that screen u can delete/edit watermarks.
