I'd like some help regarding color. Which of these do you find most appealing - or how would you change...

blue definately, but maybe a tiny little bit less than this version - the first one looks like the white balance was off, rather than evening sun. dunno why:dunno

Well keith, id stick with the original lighting. I feel the sun more in this version, and though the gold works really well, It seems to lose the head of the bird in the water.
great shot either way - i really like how you waited and framed the bird between the wood stakes.

I'd say that if nature's given you soft, golden light, you should use it! No harm in amplifying it a wee bit, but in the third shot it's overdone. It's also a pity that most of the bird is backlit, that golden light would have been nice shining full on the bird.
