Is there a way to categorise these sub-categories under galleries?

For example:

1) Portfolio>Travel>Australia>Phillip Islands

2) Portfolio>Travel>Australia>Twelve Apostles

> categories contain galleries and optionally contain subcategories
>> subcategories contain galleries
>>> galleries contain photos

Your request has 1 too many levels.
If you want to use Portfolio as your category, you might consider a subcategory of Travel Australia.
