Moving Gallery Names

When I look at example sites such as Moon River Photography I see where their individual thumbs in the Gallery catergory have the name of the gallery under the thumb instead of off to the side. I can't seem to find how to make that change for a couple of my categories. Any help would be greatly appreciated. Also, I notice that my catergory called "Galleries" is 2 long columns instead of 5 across even though there are enough galleries in it.
