Editing background and color of text boxes

I'm having the hardest time with these themes and customizing my webpage. I'd really like to a have a plain background (gray, white, black, gradient, etc) but the junk that comes with themes is in my way-- color of text boxes, borders around text boxes. How can I modify all this to just a simplified design?
