gallery in a gallery - I just don't get it! Help!

I've read the help files a bunch of times, but either it's not very intuitive, or I'm just dense... Regardless, I need help please.

I went to control panel and created several sub-categories under the 'Portfolio' gallery. The idea being is that I want to place multiple gallery folders in the top-level Portfolio gallery so I can showcase my work by category. I was only able to get one sub-category folder inside the top-level Portfolio gallery.

I must be missing something very simple, but I'm just not finding it, and I need to show this gallery to a perspective client ASAP.

A Sub-category will not show on the category page until at least one
gallery is in the sub-cat. Could this be why you only see one?

Yes, that was part of my problem, as well as not really understanding the way SM organizes their file hierarchy, which it seems I had completely backwards! Nevertheless, I believe I am on the right track now.
