OK, I've made my new header (just basic for now). Works just fine.

I made it 750px but it's still not quite as wide as the default Carbonite, I'd like the header to be the exact size so there is no border. Can't seem to find that though.

How do I set a default image for the Gallery Categories thumbnail?

Finally, where do I remove the "Abouna's Home" text?

Your banner is already the original size, played with it and couldn't get it any wider.

The cat thumb will use a gallery featured photo.

The overall background image on the homepage is 790 pixels wide. It has a soft edge, so I don't know whether that's how wide you want to make your banner image or not. You'll have to experiment.

A category thumbnail takes the thumb from the first gallery in the category. You can both arrange the order of the galleries to determine which one is first and you can set a thumb for a gallery, but you can't separately set a thumb for the category.
