want to keep "x galleries with y photos"

On my home page I am showing categories and all but one indicate "x galleries with y photos." I'm guessing that one doesn't because it contains unlisted or password protected galleries. (Which one is it? I have both.) Is there no way to over ride that? I would like it to indicate the number of galleries and photos on all of my categories. It looks unbalanced for one category to not do so.

I think you have that one category that contains a gallery set with the option Clean to yes. One gallery in a category set with clean will make the whole category display that way. Changing the setting in the gallery customizations should fix you right up.
